Baijiu (白酒), meaning "white liquor" in Chinese, is a traditional distilled spirit that has been enjoyed in China for centuries. At Sanyou, we are proud to bring this incredible spirit to Australia, crafting our own Tasmanian-made baijiu using locally sourced grains and pure water, while staying true to time-honored Chinese production methods.
What Makes Baijiu Unique?
Baijiu is unlike any other spirit due to its distinct fermentation and distillation process. Unlike whiskey or vodka, which use liquid-state fermentation, baijiu undergoes a solid-state fermentation process in clay or stone pits, using a special starter culture known as qu (曲). This method results in bold, complex flavors that develop further during aging, often in traditional clay pots.
