Baijiu (白酒), meaning "white liquor" in Chinese, is a traditional distilled spirit that has been enjoyed in China for centuries. Baijiu is unlike any other spirit due to its distinct fermentation and distillation process. Unlike whiskey or vodka, which use liquid-state fermentation, baijiu undergoes a solid-state fermentation process in clay or stone pits, using a special starter culture known as qu (曲). This method results in bold, complex flavors that develop further during aging, often in traditional clay pots.
