After what feels like a lifetime our baijiu has now reached 5 years old!
That's 5 years in the traditional baijiu aging pots, down here in Tasmania.
It has been profound how much the baijiu has changed in the pots over that time. When I first inspected Chinese baijiu aging pots I wondered to myself, 'what could these pots possibly do?", well the answer is lots! It is some combination of oxidation, chemical balancing and a bit of magic if you ask me. Whatever it is, the proof is in the puding (or baijiu in this case).
We are so excited to share this 5 year aged baijiu with the world (mostly Australia) to see whether it can become the Australian-Chinese connection that we have always hoped it would be!
